Haddock in Tomato Sauce with Cannellini Beans
Soften a chopped medium onion in olive oil; add tablespoon of chopped garlic at the end plus a teaspoon of ground fennel (one minute for the garlic and fennel) then add three/four cups tomato sauce and then add a cup or so of chopped spinach. ┬áSimmer for 10 minutes, stir in a can of drained and rinsed Cannellini beans, then layer on four pieces of haddock which have been washed, patted dry, sprinkled with lemon juice and dredged in dry rub – chili powder, dash of cayenne, paprika and maybe a dash of nutmeg. ┬áSteam Haddock for 10 minutes.
